Ingredients
- 250g salted Rochefort butter + 50g for the individual moulds
- 250g flour
- 250g sugar
- 5 eggs
Method
- Preheat your oven to 180°C
- Gently melt the salted Rochefort butter in a frying pan without letting it colour
- Beat the 5 egg yolks and the sugar until the mixture reaches the ribbon stage
- Add the flour to the egg yolk and sugar mixture. Mix
- Add the melted butter
- Beat the 5 egg whites until stiff
- Gently fold the egg whites into the mixture with a wooden spatula
- Divide between individual cases
- Put in the oven and cook for between 30 and 40 minutes
