  • 250g salted Rochefort butter + 50g for the individual moulds
  • 250g flour
  • 250g sugar
  • 5 eggs


  1. Preheat your oven to 180°C
  2. Gently melt the salted Rochefort butter in a frying pan without letting it colour
  3. Beat the 5 egg yolks and the sugar until the mixture reaches the ribbon stage 
  4. Add the flour to the egg yolk and sugar mixture. Mix
  5. Add the melted butter
  6. Beat the 5 egg whites until stiff
  7. Gently fold the egg whites into the mixture with a wooden spatula
  8. Divide between individual cases
  9. Put in the oven and cook for between 30 and 40 minutes
