Using fresh milk that comes straight from the farm, our cheese is made in Rochefort in accordance with Trappist cheese-making traditions. Our cheesemaker does everything to make sure that the authenticity of the recipe is preserved. He is involved in every stage of the cheese-making process, from adding the starter culture and then renneting the milk to the shaping of the cheese, all done with meticulous care and attention. Rochefort cheeses are always put in their moulds, removed from their moulds, rubbed and returned to the ripening room by hand.

Our Rochefort Tradition and Mi-Vieux cheeses are washed and smear ripened. The unique feature of the Trappiste de Rochefort cheese is that, as the name suggests, it is ripened with real Rochefort 8 Trappist beer. 

Rochefort cheeses with Seaweed, Hazelnut and Organic Basil are blue cheeses. 

And the latest arrival, Crémeux BIO, is made using organic ingredients and has a soft, smooth texture combined with a very strong character.

To make these cheeses, we work with milk produced by farmers who really prioritise human and animal health, together with a commitment to achieving carbon neutrality on their farms, offering fair pay and producing high quality milk.

With their different personalities, our cheeses reflect all the qualities of the Belgian “terroir”.

The Rochefort Mi-Vieux goes perfectly with a tasty Belgian beer, while the Rochefort Tradition is bound to satisfy young and old alike when served with a generous slice of buttered country bread.

Rochefort with Algues (Seaweed), Noisettes (Hazelnuts) or Basilic (Basil) add a touch of freshness to an aperitif and infuse our recipes with sunshine.

The Rochefort Trappiste and Crémeux cheeses vie with each other when it comes to taste and authenticity on a wonderful regional cheese platter.
