Oven-baked Rochefort Le Crémeux
Goes perfectly with a lovely Trappist beer.
- 1 Rochefort Le Crémeux
- 3 tablespoons pecans
- 3 tablespoons dried cranberries
- 150g fresh blackberries
- Seeded, plain or herb crackers
- Ground pepper
- Cut the top of the Rochefort Crémeux into 4 in an ovenproof dish or a small cast iron casserole dish. (The dish should be slightly larger than the cheese so that it doesn’t overflow).
- Put in the oven until the cheese has all melted.
- Toast the pecans in a pan.
- Take the cheese out of the oven, season with pepper and garnish with toasted pecans, cranberries and blackberries, whatever takes your fancy.
- Dip the crackers in the cheese - share as an appetiser or for dessert.
For fans of sweet/savoury combinations, add a drizzle of maple syrup on top of the roasted pecans.
