Oven-baked Rochefort Le Crémeux

Goes perfectly with a lovely Trappist beer.

  • 1 Rochefort Le Crémeux
  • 3 tablespoons pecans
  • 3 tablespoons dried cranberries
  • 150g fresh blackberries
  • Seeded, plain or herb crackers
  • Ground pepper
  1. Cut the top of the Rochefort Crémeux into 4 in an ovenproof dish or a small cast iron casserole dish. (The dish should be slightly larger than the cheese so that it doesn’t overflow).
  2. Put in the oven until the cheese has all melted.
  3. Toast the pecans in a pan.
  4. Take the cheese out of the oven, season with pepper and garnish with toasted pecans, cranberries and blackberries, whatever takes your fancy.
  5. Dip the crackers in the cheese - share as an appetiser or for dessert.

For fans of sweet/savoury combinations, add a drizzle of maple syrup on top of the roasted pecans.
