  •  240g “soft” Rochefort Butter
  •  2 rolls puff pastry      
  •  200g sugar         
  •  240g ground almonds         
  •  2 eggs        
  •  1 egg yolk


  1. Cream the butter and sugar, add the ground almonds and the whole egg.     
  2. Line a floured pie dish with one of the rolls of puff pastry.     
  3. Brush the edge of the pastry with egg yolk.     
  4. Transfer the frangipane to the middle of the dish and hide a charm in the mixture.     
  5. Cover with the second roll of pastry, making sure the edges are sealed.     
  6. Glaze with egg yolk and bake at 180°C (gas mark 6) for 20 minutes.
